Pecorino
Pecorinos are traditional, creamy, hard, drum-shaped cheeses. Peccorino is the Italian name for ewes’ milk cheese. They come in a variety of flavours determined by their age. Aged Peccorinos referred to as ‘stagionato’ are hard and crumbly in texture with buttery and nutty flavors. Young or ‘semi-stagionato’ and ‘fresco’ Pecorinos feature a softer texture with mild, creamy flavors.
The Gourmet Greek Peccorino is of a fresher variety (“fresco”), softer and milder with a milkier flavor.
